Apple and Cranberry Crumble
There is nothing like a crumble over the winter time to feel all cosy and nourished. I am a fan of this delightful dish as it is quick to make and can feed plenty. This crumble was inspired by one of Deliciously Ella's recipes. I have changed a few ingredients and used ingredients that I could find in sustainable packaging or package free.
Ingredients:
8 red apples ( I used cooking apples from the garden, but red apples are sweeter)
1/2 cup cranberries
1 tbsp maple syrup
2 cups nuts of choice. I used almonds, brazil and hazelnuts
2 cups oats
2 tsp ceylon cinnamon
1/2 tsp ground cloves ( or more if you like)
4 tbsp coconut oil melted
1/3 cup maple syrup
1 tsp vanilla extract
Method:
Peel, core and chop the apples
Place in a large pot and add the cranberries and maple syrup.
Let them stew for about 10 min.
While you are waiting for them to be ready you can prepare the topping.
Crush the nuts to a powder and add to a bowl along with the oats.
Add the cinnamon and ground cloves and mix all together.
Melt the coconut oil and add the maple syrup and vanilla extract.
Combine this into the nut/oat mixture.
When the apples are ready, take off the stove and place in a casserole dish.
Add the crumble topping and place in the oven for 20 minutes at 180c.
Serve with some banana nice cream. Delicious.
