Chewy Peanut Butter Cookies

These are quick and easy to make and great if you want a sweet treat in 20 minutes.
You can use whatever nut butter you have available but I like peanut butter the most.
This makes about 12 small cookies.

Ingredients:
1/2 cup nut butter
1/2 cup almond flour
1/4 cup coconut sugar/brown sugar (melt first for a chewy cookie)
1 flax egg (1 tbsp ground flaxseed to 3 tbsp water, leave for 5 mins)
1 chopped medjool date (optional)
1 tbsp molasses (optional)
Method:
Mix together the flax egg first.

While it thickens, mix together the almond flour and sugar.

Add the nut butter and combine.

When the egg is ready add to the mixture.

Add the optional date and /or molasses.
Roll into small balls and flatten.

Cook in a preheated oven 180c for 10-12 minutes.
You really have to keep an eye on them. They can burn very quickly.
